Bonus Tips 1: Before starting and adding to the butter mixture, mix all the dry ingredients. This will help lightly expend the baking powder and xanthan gum throughout the batter.

You are looking to melt the butter. You can use a saucepan to soften it when you don’t like melting the butter in the microwave if you need your cookies to melt in the oven. This melted butter helps for the process, as well as using 100% erythritol too.

Step 1 – First Preheat an oven forced fan to 180C (360F)

Step 2- Then melt the butter in a saucepan until melted over medium heat. Now put the melted butter and erythritol in a mixing bowl together and beat until combined very well. After that, add the vanilla and egg, and continue to beat on short for 15 seconds.

Step 3- Now add the baking powder, almond flour, salt, and xanthan gum. Continue to beat until well combined.

Step 4- Now press the dough together and remove it from the bowl. Rub in the chocolate chips with a silicone spatula or your hands.

Step 5 – Put separate and shape the dough into 12 portions, use a small ice cream scoop and place it on a lined baking tray—Bake for the next 11-12 minutes at 180C (360F).

When you were removing from the oven, the cookies will look a little undercooked, but after cooling, they will become harden.

Step 6– Let it cool at least for 15 minutes before you serving. You can Keep in an airtight container for up to 7 days.

If using unsalted, add a couple of pinches of sea salt, but always salted butter is recommended.

If cookies aren’t flat, what should you do?

Suppose your cookies didn’t flatten in the oven while making this recipe. It happens if you are not using 100% pure erythritol; in such cases, your cookies will not flatten.

If it still doesn’t melt into cookie shapes in the oven within the first few minutes, which means that you have added too much flour or you’ve not melted the butter as instructed above.

Xanthan Gum: Without it looks too flat. I suggest almost eight minutes. You can also substitute xanthan gum with gelatin.

Liquid Stevia: If we use keto chocolate chip cookies with stevia, the cookies came out very hard as a rock.
